In conjunction with National Taco Day on Monday, Oct. 4, 2021, Arlington Eats host Cynthia Lemus visits Gilberto’s Taco Shop.

Gilberto’s Taco Shop is known for its birria tacos, a Mexican dish. José Ruiz opened Gilberto’s Taco Shop in 2019.

“I had a craving one day, and that’s how it started,” Ruiz said. “I was craving breakfast tacos and breakfast burritos. I couldn’t find them anywhere. I’m going to start my own restaurant and we’re going to serve breakfast all day long.”

In addition to breakfast foods, Gilberto’s serves a variety of Mexican dishes like quesadillas and special super fries. 

"Ever since I moved to Arlington, established my business and had my daughter, my life has changed,” Ruiz said.
