Arlington Eats: Brisket Boss LLC Sizzles to New Heights

Arlington Eats host Jeremy Thomas speaks with owner of Brisket Boss LLC, Royce Simmons, to learn about his journey and the family connection to cooking.

Simmons said his dad and uncle started barbequing decades ago. He chose a different career path in the Army and then a leading aerospace and defense company, but that love for barbeque or his family’s legacy never left. 

“Brisket Boss is a 70-year story comprised in the last four-to-five years,” he said. “In my retirement years, I decided to get back in the barbeque land and come up with some spices that would be good for sick and shut-in people in the hospital that had low sodium. Everything that I do, is a resemblance of everything [his dad] did.”

The recipe for this amazing barbeque can’t be given away, but here is what Simmons offers. 

“We do a lot of seafood, chicken, and sausage,” he said. With the seasoning that I have now, I do a lot of vegetables.”

That spice he’s referring to is his special low-sodium Savory Peach Molasses Seasoning. 

“I’ve got 19 different spices all mixed into one,” Simmons said. “It has a Cajun kick to it. If you want sweetness, it has sweetness to it.” 

What’s also sweet is that Simmons was named a finalist for H-E-B’s Quest for Texas Best competition earning a cash prize. 

“That was the day that I cried because I worked on my job for 40 years and to jump into something like that and to be a winner, I was just amazed that day that I got the opportunity to support Arlington,” he said.  

Simmons appreciates his community for their support of his business right here in The American Dream City. 

"I’m happy to be here, and I am happy to be affiliated with this city and the growth of the city,” he stated.
